Pizza, Pumpkin Pancakes and Perch...oh my!

Halloween weekend was full of fun and good food. We spent Friday night with good friends at "the house in the woods"... (or should it be the cabin by the lake?) and then on Saturday night we had a spooky camp out under the stars. It was a great way to spend the weekend.

For dinner the first night we made pizzas. For the grown ups we had pizzas topped with spinach and feta cheese. The girls made their own mummy pizzas. For the crust we used the Robbie's thin crust recipe and substituted spelt for the flour. I had never made my own pizza crust... so there was a bit of a learning curve... but I think the end result was delicious.

We topped the pizza with a can of organic pizza sauce, grated Italian cheese blend, red onions, olives, spinach, and last but not least...some feta crumbles.

We then baked it at 350 for about 12-15 minutes... until the cheese was melted and starting to brown just slightly.

Then the girls made their own mummy pizzas:

They rolled out their portion of the dough into little rectangles.

Then filled them with sauce, olives, pepperoni and cheese.

Finally they wrapped them up... sprinkled them with cheese and added olives for eyeballs. Who knew eyeballs could taste so good! We baked them at 350 for 12 to 15 minutes and then Wah-la... a tasty mummy.

The next morning I made some Pumpkin pancakes for breakfast.



I forgot to bring my recipe... so I was forced to improvise a bit... but I think that they came out rather nicely...and yes I am bravely posting a morning photo of myself here...

For dinner the second night I made up a pot of spaghetti sauce in the crock pot. I just threw together some cans of diced tomatoes, tomato sauce and paste with onions, garlic and herbs from my garden. We talked about cooking up a pot of Bouillabaisse with perch caught from the lake... but we just didn't get around to it. The girls did have a fun time catching fish, however!

We also made spooky shadow puppets and carved pumpkins. All in all it was a great time!
